SuperFood Coleslaw

This I promise will be your new favorite coleslaw or just salad!  This takes 5 minutes to make and is so jam packed with vitamins, nutrients and antioxidant power your body will be so happy!  This 'slaw' is made with SuperFood ingredients: kale, red cabbage, carrots (all organic*) and greek yogurt.  For those who are not aware SuperFoods are nutrient-rich foods that are beneficial to your overall health.   For more info on the pow kicking benefits of this coleslaw, click the links and learn!

Servings: 6 Ÿ Size: 1/2 cup Ÿ Calories: 23Ÿ Fat: 0g Ÿ Carbs: 4gŸ Fiber: 1g
Sugars: 1.7g Ÿ Protein: 2g ŸSodium: 42mgŸ Healthy notes: Low in sat fat, No cholesterol, High in calcium, fiber, manganese, potassium, thiamin, vitamin A, B6 and C.

  • 1 cup chopped kale
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup greek yogurt plain (I like Fage)
  • 2 tsp. dijon mustard
  • 2Tbsp. red wine vinegar
  • 2 tsp. dehydrated onion (can add fresh grated red onion)
  • salt pepper to taste
Get Cooking:
Chop and shred all vegetables and place in a bowl.  Add greek yogurt, dijon mustard, vinegar and spices. Stir well and chill in fridge until ready to eat.  Yum Yum!
