Italian Beef Pot Roast

Yummy Yummy Yummyyyyyy! (sang like song: For the love of money by O'jays) This is because this is that good, I can't help but dance and sing!  I love my crock pot in the fall/ winter months! This meal will definitely fill your home with a smell that will make you want to devour the entire roast!  I don't advise this, that would Not be a SKINNY supper.

I decided to use italian seasonings, tomatoes and of course red wine for the roast.  This gives a nice spin on traditional pot roast.  I think you will be able to taste the zing in the sauce.  Make this for your family or serve with remainder of the wine and have a lovely date night at home!  All the men out there take note, this is the easiest meal to make your lady and impress BIG!  Served with Mashed potatoes and kale.

Servings: 8  Size:  about 2 slice of beef and some carrot mix gravy  Calories: 242  Fat: 7g  Protein: 35g  Carbs: 4.8g  Sugar: 2.4g Sodium: 93mg (plus whatever you add for taste)  Healthy Facts:  Low sodium, High in: Niacin, Phosphorus, Vitamin B6, Very High in: Selenium, Vitamin A, Vitamin B12, Zinc


  • 2 lb beef roast
  • 3 carrots sliced
  • can of diced tomatoes
  • 1/2 red onion
  • 1/2 sweet yellow onion
  • 4 cloves minced garlic
  • 1/2 cup red wine
  • 1/2 cup water
  • Spices: 1/2 tsp of each:
    • red pepper flakes
    • salt
    • pepper
    • dried parsley
    • rosemary
    • basil
    • oregano
    • garlic powder
    • onion powder
    • fresh parsley to liking
  • 2 Tbsp. arrowroot, or cornstarch
Get Cooking:
This is an easy one everyone!!! Add everything to your crockpot.  Cover.  Set at Low.  And let cook all day for 8 hours!!  At the end add cornstarch and let that thicken sauce. Salt and pepper again to taste. I served with mashed potatoes with kale. Yum Yum!
