This past weekend Jeff and I attended his annual work Holiday party. His office rents out two floors at the Marriott Copley in Boston. All night there is complimentary food and drinks, while you dance and play casino games. To sum up, we had a great night. The food was delicious. One hors'doeurves that caught my attention were the crostini with goat cheese and fig. Oh man what a killer combination. Of course I decided to make my own appetizer with this same combo.
December is here and yes some of us will be entertaining at some point during this Holiday hoopla. I decided to make a quick and easy appetizer to serve to your expected or unexpected guests. This is a simple dish with apples, figs, goat cheese and honey. So delicious and a healthy alternative to the many treats served all month long. I must confess when I made this appetizer I actually ended up eating as my lunch. It was so good I couldn't eat just one or two.

- 1 macintosh apple or any apple you prefer. Macintosh are just smaller.
- 1 oz goat cheese
- 1 tsp chives chopped
- 2-3 Black Mission Figs Organic
- 1 tsp honey
- 1/8 cup walnuts toasted and chopped
Slice apples horizontally, starting at the bottom working to the stem. In a small bowl mix goat cheese, chives and toasted walnuts. Spread this on top of the apples. Cut dried figs into three slices and place one slice on top of goat cheese spread. Drizzle with honey and sprinkle kosher salt. Yum, Yum!
