Breakfast Tacos

This is simple enough.  I love tacos, I love Breakfast, put the two together and I now can love Breakfast Tacos!!  This was a simple meal that has homemade turkey sausage, a kale onion and pepper slaw and of course eggs!  This was the perfect way to start my morning.  Plus I was full for hours!!

Everyone will be a fan of these, so... of course you should make them! :)

Servings:  8  Size:  1 tortillas filled  Calories:  185  Fat: 7g   Carbs: 13g   Fiber:  2g  Protein:  13g  Sugar: 1.2g   Sodium:  163 mg and whatever else you add
** most people eat two tortillas but they are very very filling!!

  • 8 corn tortillas
  • 4 eggs
  • 3 leaves swiss chard, kale, or spinach coarsely chopped
  • 1/2 onion
  • 1/2 red pepper
  • 3 oz Monterey Jack Cheese (Jalapeno) 
  • Homemade Turkey sausage
    • 1/2 pound ground turkey breast
    • 1/4 tsp. cumin
    • 1/4 tsp. pepper
    • 1/4 tsp. red pepper flakes
    • 1/4 tsp. thyme
    • 1/4 tsp. marjoram
    • 1/4 tsp. garlic powder
    • 1/4 tsp. onion powder
    • 1/4 tsp. parsley
    • 1/4 tsp. kosher salt
  • Additionals I used:
    • 1 avocado
    • Trader Joe's Salsa Verde (so yummy!)
Oh my cooking up a storm in the morning!

Get Cooking:
First lets make the homemade turkey sausage.  I like to use ground turkey breast but ground pork can of course work just as well.  In a mixing bowl add meat, and spices.  Mix and thats it.  You can now shape this into patties or links.  For this recipe will we simply be cooking them up until they are ground up and browned like taco meat.  

Next, after the sausage has been browned.  Cook up the slaw.  Take the diced onion and red pepper and cook over medium heat in a sauté pan until soft, about 5 minutes.  Add the chopped kale, spinach or swiss chard and cook until soft 1-2 minutes.  Add red wine vinegar and remove from heat. 

Last we will scramble up eggs.  I like to think it is 1 egg per person.  Add the eggs to a bowl add 1 tbsp milk or water per egg to the bowl and beat well.  Cook in a sauté pan over medium heat and mix until scrambled. Add the sausage and mix together. Remove from heat.   Heat the tortillas in a wet papertowl in microwave for 1 minute or heat over a low flame on the stove.  Layer your ingredients inside tortilla just like you would tacos.  Mine went: Tortilla, slaw, egg sausage mix, cheese, salsa and then avocados.   I also served mine with a side of refried black beans.  YUM, YUM!
