The other day I made these quick little chops that ended up tasting amazing!! I thought I would share this easy and quick way to cook pork chops.
These are simply dusted with coconut and spices and baked. That's it! The key is finding the right spices that enhance the flavor of the delicious pork. I served min alongside my fresh Quinoa Avocado salad.

Healthy Tidbits: High in Niacin, Thiamin, Selenium and Vitamin B6. Low in sodium and sugar.
- 4 lean boneless pork chops
- 1/2 cup Unsweetened Coconut Flakes
- 1/4 tsp red pepper flakes
- 1/4 tsp garlic powder
- 1/4 tsp rosemary
- 1/4 tsp thyme
- 1/4 tsp oregano
- 1 egg
- 1 tsp honey
Preheat oven to 375. In your food processor blend the coconut flakes until they are a bread crumb consistency. In a small bowl add blended coconut flakes and all of the spices. In a separate bowl add the egg and honey, beat well until mixed together. Take each pork chop and dredge in egg mixture and then coconut mixture until completely coated. Place on a baking sheet lined with parchment paper. Bake for about 15 minutes depending how thick your chops are. The juices will run clear, the pork chop will be just turning firm to the touch and a golden brown crust when cooked.
