Pizza Soup

I am not trying to sound narcissistic or anything but scouts honor this is the tastiest soup yet!  I could not stop eating this!  This was a big bowl of warm tomato, meatball and spinach goodness! The flavor was reminiscent to pizza.  As my other half said this is the Italian version of tortilla soup.  Dubbing this Pizza Soup.  

Trust me when I say this will be a hit with your family.  I am confident that this recipe will be a favorite among children and adults.  I thought this was similar to pizza in that, it has all of the same scrumptious flavors of a pizza.  Tomatoes, cheese, and any topping you would put on a pizza you can throw into this soup.  In my soup specifically I had meatballs, pepperoni, spinach and kale.  I only wish I had mushrooms and peppers on hand to also add to this gooey bowl of heaven.

Servings: 10 Size: 3/4 cup Calories: 141 Fat: 4..4g Carbs: 7g Fiber: 2g Protein: 17.6g Sugar: 3.2g Sodium: 138mg ** not including salt added for taste

Ingredients:

Meatballs:
  • 1 lb ground beef
  • 1/2 cup Ricotta, Part Skim Milk Cheese 
  • 1 egg
  • 2 clove garlic minced
  • 1/2 onion diced small
  • 1/2 tsp red pepper flakes
  • 1/4 tsp black pepper
  • kosher salt to taste
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 1/4 tsp rosemary
Soup:
  • 1 tbsp tomato paste (about half a can)
  • 1 28 oz can crushed tomatoes 
  • 1 28oz can diced tomatoes
  • 2 carrots diced
  • 1 onion minced
  • 2 cloves garlic minced
  • 1, 4oz can green chiles 
  • 3 cup low sodium chicken broth
  • 2 cups water
  • 1 cup kale roughly chopped
  • 1 cup spinach chopped
  • 1/4 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp red pepper flakes
  • salt to taste
***The best part of this recipe it is like a pizza, add whatever toppings you enjoy on a pizza into this soup. For example: mushrooms, green peppers, sausage, red pepper, broccoli...

Get Cooking:

To make meatballs add all ingredients except ricotta to a bowl and mix well.  After those ingredients are incorporated add the ricotta and continue to mix until that is blended in well with the meat.  roll meat into bite size meatballs. Set aside.


Now the soup, In a large stock pot on medium heat add non stick spray and cook onions until translucent.  Add garlic.  After onion and garlic has cooked for a minute add the carrots.  Cook for another minute.  Add the diced tomatoes and seasonings to the stock pot.  Cook until it comes to a bowl.  Next add crushed tomatoes, diced green chiles, chicken broth, water and tomato paste.  Bring this mixture to a bowl.  Once bowling reduce heat and add meatballs and whatever other ingredients you want on top of your pizza ;).  After this has simmered on low for about 25 minutes add the green veggies like spinach and kale.  Let those softening and then serve immediately.  I sprinkled an italian 4 cheese blend on top of my soup to give an even more pizza quality.  This does not have to be done.  Yum, Yum!

    1. HAHAHA!! I love the face! It may sound strange but broccoli on pizza is a great addition! :)
