Coconut Milk Caramel Sauce

     Experimenting with sweets is one of the fun things I get to do for my Blog.  I decided to take a stab at making caramel sauce.  I have read in recipes that coconut milk is similar to sweetened condensed milk.  Well condensed milk is used to make a rich caramel sauce, so I thought hmmm lets try this with coconut milk.  By using coconut milk we reduced the calories, sugar and fat by half! This sauce is still super sweet and tasty!  No more missing out on caramel goodness.  I cannot wait to use this sauce in a ton of new recipes!  

     This takes 30 minutes to make and is a better alternative for you or your family.  This caramel sauce being made from coconut milk is dairy free, gluten free, vegan and Paleo friendly.  There is no reason not to make this!!!!  Plus it's Caramel Sauce!  Enough said.

Ingredients:
  • 1 can light coconut milk 
  • 2/3 cup Coconut Sugar 
  • 1 tsp vanilla
  • 1/4 tsp kosher salt



Get Cooking:

In a small saucepan on medium high heat add coconut milk and sugar.  With a wisk stir and bring to a boil.  Reduce heat to medium low and let simmer/ boil for 25-35 minutes.  The amount of time depends how thick you want your caramel sauce.  I did mine for 30 minutes.  The sauce will thicken some upon cooling.  Transfer sauce into a glass container and let cool.  Store in refrigerator until ready to use.  

Reheat by placing glass container filled with sauce in a bowl, fill that bowl up with hot boiling water.  The sauce will heat up nicely.
