Baked Chicken Nuggets

     Today is a treat! I have for you baked, no bread crumb made chicken nuggets!  These could not get any healthier!  My Hubs who loves all foods that kids eat, was my inspiration for these little morsels.  He adores chicken nuggets and I usually hate him eaten them because they are deep fried.  I decided to treat him yesterday for dinner with a "kid favorites" dinner.  We had these chicken nuggets coated in almonds and baked.  Quinoa-N-Cheese, which is quinoa instead of elbow noodles, (recipe will be on blog tomorrow).  Lastly a fresh bowl of fruit salad.  This was his type of meal!  He was a happy little boy  man.

     If you have picky eaters and always struggle finding a healthy alternative to their favorite foods this is a great recipe to keep on hand.  Making these nuggets were extremely easy and quick!  Which is helpful when time is short.  Try them and you will never go back!

* This fat is healthy fats for the body and brain, It is monounsaturated fats from almonds these fats are good and support healthy weight loss and promotes strong brain function.  Research has shown a diet rich in monounsaturated fats helps reduce belly fat and lowers a persons BMI.  So do not let that number scare you! :)

  • 2-3 boneless skinless chicken breasts cubed as shown in pic
  • 3/4 cup almond meal
  • 1/4 cup parmesan cheese
  • 1 egg beaten
  • 1 tsp basil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp italian seasoning
  • 1 tsp thyme

Get Cooking:

First, preheat oven to 400.  Next, chop all of your chicken breasts into cubes.  In a bowl crack and beat the egg.  In a different bowl add almond meal and seasonings, blend well.  Line a baking sheet with parchment paper and let the dunking and dredging begin.  Dunk the chicken cubes into the egg and then drop into the almond meal mixture.  Once chicken is coated place on baking sheet.  Bake at 400 for 10-15 minutes.  I like to turn my nuggets half way through cooking so both sides get browned.  Make sure the chicken is not pink and juices are running clear.  That is how you know they are done.  These cook up quick because they are small pieces.  Do not overcook they will dry out.  Serve with bbq or nothing because they are delicious just how they are.  Yum, Yum!
