Whew, alright Loves, I have a recipe up! And this is a GREAT recipe! I took my mom's advice and made something ooey gooey and sweet, after the horrible affair that took place a week ago here in Boston. This was quite the comfort food/dessert. I decided to create Chocolate Covered Strawberry Brownies!
Now, I have been trying to perfect my brownie recipe. It has been tough trying to make them sweet and still healthy. I tried using black beans and avocados. But, the texture was completely off. Then I tried bananas to sweeten the brownies. But that just made the brownie taste like, well bananas! So finally I have a delicious recipe! This is the perfect dense consistency. The perfect amount of sweetness (of course naturally sweetened). And the right amount of chocolatey flavor!
The idea for adding strawberries was actually just because strawberries were on sale at the grocery store! I guess that is how a lot of my recipes start. :) I made my Strawberry Jam and mixed that into the brownies.
I LOVE brownies and these are healthy with no flour and naturally sweetened so that makes them even better! Try them no one will be able to tell the difference. Cross my heart hope to die stick a needle in my eye!

- 4 tbsp unsalted butter
- 1 oz Greek Yogurt, Plain, Nonfat
- 1/2 cup dates
- 1/4 cup Coconut Sugar
- 1/2 cup cocoa
- 3/4 cup almond meal
- 1.5 tsp vanilla
- 1/2 tsp baking powder
- 2 eggs
- 1/2 cup dark chocolate chips
- package of strawberries
- 1 lemon only half of the juice will be used.
- 1 tbsp coconut sugar or honey or agave
Soak 7-9 dates in a bowl of water for at least an hour. (Pic 2).
Preheat oven to 350.

Set aside your jam and allow it to cool while you make the brownies.
In a large mixing bowl add butter and melt in microwave for 30sec-1min. Let cool slightly. Add greek yogurt and vanilla to butter and mix well.
Remove pit and puree dates in a blender. I add 1/4 cup water to help the puree process. Add 1/2 cup of the pureed dates to the butter yogurt mixture. Next, add the coconut sugar and 1 tablespoon of the strawberry juice. Mix, Mix, Mix.
Now you want to add the cocoa and mix until blended. After add both eggs and mix those well.
Lastly, add the almond meal, baking powder and salt. Mix all of these ingredients for about 30 sec.
Add handful of dark chocolate chunks or chips. Mix Well. (Pic 3).
In an 8x8 pan spray with non stick spray. Pour brownie mixture into the pan. Strain the strawberries that have been sitting to try to remove most of the liquid. Add drops of the strawberries to the top of the brownies. Swirl with a knife the strawberries and brownie mix, to create a marble effect. Add another handful of chocolate chunks to the top of the brownies.
Bake at 350 for 18-25 mins. Mine took 22 min. Do not over bake! That is never good for brownies.
Let cool for an hour before slicing and serving. Yum, Yum!
