My dad since as long as forever has been telling me to make tarragon chicken. Well last night I decided to give it a go. And let me just tell all of you, this is a really easy dish to make. Ok. I think it took me all of 20 minutes to whip up. Plus it tastes and looks like a fancy shmancy restaurant dish. This is a great recipe to make those Mother's in your life. (Nudge, Nudge). Yes, Mother's Day is weeks away. Wow time is whizzing by. Anyway. Sorry for the lack of focus. I think it is because it is Friday :) :) :) AHHH FOCUS.
If you have never tasted the herb tarragon it is quite a treat. It has this sweet quality that almost reminds you of licorice. Pair the sweet tarragon with the tanginess of garlic, onions, greek yogurt and dijon mustard, and you have an amazing flavorful meal! I used white wine in this dish (that makes it fancy) tee hee hee. A friend of ours has a wine company called One Hope. This wine is sooo delicious. It is distributed out of California and 50% of the proceeds go to a different charity. Meaning different wines have different charities that the money goes to. What could be better drinking wine plus donating to charity?! Such an amazing concept Brandon has created. I love the wine they all taste phenomenal and it was lovely to cook with. You want to make sure you use a wine that you would drink to use in your dish. Trust this, it makes a WORLD of difference. I used One Hope's Sauvignon Blanc. When you buy a bottle of Sauvignon Blanc a tree gets planted! Love it. - 2 Boneless Skinless Chicken Breast i cut them in half to make 4. This would be a lovely vegetarian meal made with portobello mushrooms!
- 1 tbsp olive oil
- 1/2 cup Plain Greek 0% yogurt
- 2 clove garlic minced
- 1 onion diced
- 1/2 cup white wine
- 1/4 cup broth of your choice. I used chicken
- 2 tbsp tarragon chopped
- 1 tsp dijon mustard
- pepper and salt to taste about 1 tsp.
Heat a large skillet on medium. Add olive oil and heat up. Next add onion and garlic. Cook for about 2 minutes. If they start browning add 1 tbsp water to stop that process.
Next add chicken lightly dusted with pepper. Cover and let cook for 4 minutes.
Now flip chicken and add tarragon and white wine. Cook for about 2 minutes stir to lift any brown bits on the bottom. Now add broth and cook an additional 4 minutes on low covered.
Once chicken is cooked add chicken broth tarragon leave some for sprinkling on top, yogurt dijon mustard, pepper and salt. Let sauce come to a simmer and let chicken cook for 2 minutes in this.
Serve over brown rice pasta. Brown rice. Or veggies. I had asparagus mmmm... Yum, Yum!
If you like a lot of sauce double the yogurt, and add 1/4 more of wine and broth.
