Pork Ropa Veija


     Hungry?!  Ready for a very easy crockpot meal?  Here you are.  I present Ropa Vieja.  Ropa whatta?  Ropa Vieja literally means old clothes in Spanish.  Ew sounds awful.  Haha well its not awful it is soooo delicious!  

    
      Ropa Vieja is shredded meat in a tomato veggie sauce.  I used a lean piece of pork, and let it simmer in a crockpot for 10 hours! Holy moly that's a long time to cook!  Disclaimer:  you do NOT have to even look or touch the crockpot for the entire 10 hours.  This is the type of dish you prep in the morning, or night before, turn it on in the a.m. and go to work.  When you get home your house smells like you are in the best Cuban restaurant!  Serve this shredded gem over brown rice, quinoa or more veggies.  My Hubs loved this so much he said he could eat the entire pot full!  2nd Disclaimer: that is a lot of meat and not the SKINNY thing to do.  But, do enjoy this for dinner and I even enjoyed it the next morning and made a ropa vieja omelette!  That is the beauty of this dish.  Takes 10 minutes of prep, 10 hours of un-monitored cooking, and then you have enough rope vieja to feed a small village.

Ingredients:

  • 4 lb lean pork shoulder or beef flank steak or chicken breasts
  • 1 green pepper de-seeded, de-stemmed and sliced
  • 1 onion thinly sliced
  • 2 clove garlic minced
  • 1 red pepper de-seeded, de-stemmed and sliced
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 can tomato paste
  • 1/4 cup water or broth of your choice.
  • salt to taste


Get Cooking:  

Get this:
Slice up veggies.
Trim any fat off meat.
place meat in crockpot.
Cover meat with veggies and remaining spices and ingredients.
Put the lid on and set crock pot to low.
Come back in 10 hours! Eat up! :)  Yum, Yum!
