Peanut Butter & Jelly Granola Bars



     I have a special treat today Loves!  Peanut Butter & Jelly Granola Bars!  Mmmm... I love PB&J, and thought what a fabulous combo to put into a granola bar!  This worked out extraordinarily! I love making my own granola bars because I like to be the one who decides what ingredients are put into it.  These my friends have quinoa, oats, flax seed, peanuts, peanut butter, my homemade Strawberry Jam, and dehydrated strawberries!  Whew these are beauties!

     These take about an hour to make including making the jam from scratch and letting them set up in the fridge.  You can make these on a Sunday and have a healthy protein filled snack for the entire week!  Try them they do not disappoint!  Especially if you love PB&J these taste just like that but rolled up into a quick and convenient bar to travel with.    



      OOOOO... Ahhhhh... Gotta love the close up shot.  These are chewy granola bars. I suppose you could bake them to make them more crunchy.


      Yesterday I took my little pups to the park and took these granola bars with me as a snack.  Yes, I needed a snack these dogs love to be outside for hours!! Especially when it is a beautiful sunny 75 degree day!  Here are some pics of the pups enjoying the day.

Healthy Tidbits:  No Cholesterol, low in Sodium, High in Dietary Fiber, High in Manganese and Protein.

Serving:  16  Size: 1 bar  Calories:  178  Fat:  8.7g  Carbs:  18g  Fiber:  5g  Protein:  8g  Sugar:  5.5g Sodium:  6mg

Ingredients:
  • 2 cups Organic Gluten Free Rolled Oats, or any rolled oats or oatmeal.
    • 1.5 ground into flour, 1/2 whole oat
  • 1/2 cup white quinoa cooked and dried
  • 8 dates soaked in boiling water for 5 minutes and de-pitted.
  • 1 tsp vanilla
  • 1/2 cup unsalted peanuts
  • 1/2 cup flax seeds
  • 1/2 cup dehydrated strawberries
  • 1/2 cup natural creamy peanut butter
  • a couple of tablespoons Homemade Strawberry Jam  



Get Cooking:

Cook quinoa according to directions and then let dry out after cooked.  Directions are 1 cup water for 1/2 cup quinoa bring to a boil.  Reduce heat and cover until water is absorbed.  To speed up drying process after they are cooked i laid them on a baking sheet and baked at 400 for about 10 minutes.

Make Homemade Strawberry Jam it takes 15 minutes!  Or of course you can use your fav store bought

Place dates into a bowl cover with boiling water.  Let soak for 5 minutes.  Then de pit and place into a blender or strong food processor.  Blend until smooth.  I add 1/4 cup of water to help the blending.  Now you have made date paste.

Grind 1.5 cups of oats into flour.  And leave 1/2 cup whole.  

Add Oats, Oat flour, Flax seed, slightly crushed peanuts, dried quinoa into a bowl.  Add date paste, peanut butter and vanilla.  Mix mix mix I used my hands.  

In a rectangle baking dish.  9x13. Lay parchment paper.  Take half of the granola bars and press firmly into the dish.  Now layer Strawberry Jam on top of this layer of granola bar.  To the remaining granola bars I now add the dehydrated strawberries and mix them into the mixture.  You can freeze the granola bar with jam for 10 minutes to harden.  Then place the remaining granola mixture with strawberries added on top of the jam.  Press until you have a 1 inch size bar in the entire pan.  



On top I drizzled some Peanut Butter that I mixed with some honey.  This is not necessary.  But it is yummy.  1 tbsp peanut butter, 1 tsp honey.  Refrigerate for about an hour

Cut into rectangles, square, whatever you prefer!  Enjoy, Yum, Yum.  Store in fridge or freezer.
